You’ll Scream for this Strawberry Ice Cream

I meant to include this with yesterday’s post…and now its just in time for the holiday.  Fresh strawberry ice cream in the middle of summer?  Sign me up.  And this one is dairy free.  HUH?  That’s right – it uses our favorite ‘cream’ coconut milk.  It is easy as pie to make (I never thought pie was easy…) but speaking of pie, you certainly could top it with the ice cream! So let’s get churning…

My niece Mary helped me whip up this super easy recipe.  At first she grimaced when I mentioned we’d be using coconut milk.  But once we starting blending this creamy concoction, she was wow-ed by the texture AND the flavor.

Strawberry Ice Cream – Makes about 4 cups

Once again, you can go wild with flavor combinations here.  Blueberries, coffee, mint chip or creme fraiche – which is the next one I’ll send your way.  As for ice cream makers, I just bought a small Rival at Target.  The canister is just the right size for two and doesn’t take too much space in the freezer.

1 – 13.5 ounce can coconut milk
1-2 pints organic strawberries
2 TB raw honey
1 TB vanilla extract

Blend all ingredients in a blender until smooth. Pour into ice cream maker and start mixing for approximately 40 minutes, or according to the directions, and freeze.

    The best part of this recipe is that you can control the sweetener and other ‘real’ ingredients. One cup provides 98% DV of vitamin C, it is also high in folate and healthy fat…so a little dab’ll do ya.

    Absolutely! I think it would be especially good with the honey, and you might even add a little basil. Great summer combinations!
