Nice to hear from you.  I highly encourage (!!!) buying turkey from sustainable sources (we got ours from Marin Sun Farm.) But, as you will notice from this site, I am not the master of roasting meats.  I will, however, contribute everything that goes with.

		<description>Karen,  It is a few days before Thanksgiving and I have yet to see the turkey recipe.  Yikes!  What is your suggestion for a heritage bird?  We went to a local farm yesterday for a pluck your own free range (true free range) heritage turkey party.  What an amazing experience.  The kids there especially loved the whole thing.  So now I have my fresh bird, what is the best way to cook a heritage?  My husband wants to do the gas BBQ but I am not thrilled with all the gas.</description>
